Who doesn’t like rich, hearty soup?<\/strong><\/h5>\n

I made this traditional and very elegant<\/em>\u00a0Indian soup for the day after Christmas. It is warm, fragrant with spices, and rich with a bit of heavy cream. The recipe assumes you know\u00a0how to cook by the seat of your pants<\/em>\u00a0as I do.\u00a0 Adjust to your taste. Serve with crusty, buttered bread. Better yet, a slightly sweet pumpkin loaf and ice-cold beer.<\/p>\n

Get a big pot.\u00a0 If you\u2019re going to get ALL of these ingredients then please make a LOT and enjoy some for later.\u00a0 Serves 10, with leftovers for later or to freeze.\u00a0 Serve it in beautiful bowls!<\/em><\/p>\n

Rosie\u2019s Mulligatawny<\/strong><\/h5>\n
In a large soup pot, melt butter and saute all these for a few minutes.<\/strong><\/h5>\n

Vegetables
\n<\/u>2 tsp peeled and finely minced fresh ginger root
\n4 medium garlic cloves, minced
\n2 cups diced carrots
\nOne small onion, finely chopped
\n\u00bd stick real butter<\/p>\n

Then add all these:<\/strong><\/h5>\n

Spices
\n<\/u>1 TBS Curry powder
\n1 tsp ground cumin
\n1 tsp paprika (not smoked)
\n1 tsp ground turmeric
\n1 tsp ground cardamom
\n1 tsp ground cinnamon
\n\u00bd tsp black pepper
\n\u00bd tsp dried thyme
\nI small bunch fresh cilantro, finely chopped
\n(about \u00bd cup\u2026reserve some for garnish)<\/p>\n

Then add these:<\/strong><\/h5>\n

1 cup red or green lentils (washed and drained)<\/p>\n

Then create\/add basic broth<\/strong><\/h5>\n

<\/u>Two jars\u00a0Williams Sonoma Turkey Gravy<\/em>\u00a0Base CLASSIC\u00a0\u00a0<\/em><\/a>(or other Williams Sonoma beef or chicken gravy base)
\nIf you use another gravy: WSTG is thick,<\/em> rich and slightly tart, and needs to\u00a0 be diluted, so any substitute should also be thick and rich.
\nFor tartness, add\u00a0 juice \u00bd to 1 whole lemon or so OR sprinkly a little citric acid (sold in packs on Amazon)<\/p>\n

1 14.5 oz can fire-roasted diced tomatoes (don\u2019t drain)
\n1 \u00bd -2 cups\u00a0
HERDEZ salsa verde<\/a>\u00a0MILD
\n(1 24 oz jar or other that is mostly tomatillo based (not green chile); this has a tiny kick to it and is nice and TART; if the substitute has no \u201cheat\u201d, use dash red pepper flakes or several shakes of <\/em>
Frank\u2019s Red Hot sauce<\/em><\/a>). This soup will be hot enough with the curry.
\n<\/em>2 cups applesauce
\n1 cup coconut milk (unsweetened)
\n
Better than Bouillon<\/a>\u00a0\u2013 chicken stock paste (1 TB)<\/p>\n

Water<\/u>
\nHow thick is it now?<\/em> Add just enough water to make a soup-like consistency (not too thin\u2026) \u00a0and cook on low to medium heat until the lentils are soft and cooked (30 minutes?). It will thicken up after the lentils cook<\/p>\n

Stir occasionally to get lentils off the bottom of the pot<\/strong><\/h5>\n

Final Adjustments
\n<\/u>Now how does it taste?
\n* Need more salt<\/em>? Rather than salt add some more Better than Bouillon \u2013 chicken paste
\n* Too thick<\/em>? Add a little more water|* Too thin<\/em>? Thicken with some instant potato flakes
\n* Not tomatoey enough<\/em>? Add another can fire-roasted diced tomatoes.
\n*\u00a0Not tart enough<\/em>? More Herdez or dash of Franks<\/p>\n

Cream
\n<\/u>1 cup or so heavy cream \u00a0to taste ( do NOT add until the end on low heat)
\nOnly when you have it just right, and are ready to serve, add and stir in the cream.
